Gettin’ through the week

This week I’m in the mood for banana oatmeal. (I originally got the recipe from Kath.) So I’ve been whipping up a delicious bowl every morning and topping it with Barney’s almond butter. So good.

Work was the same as usual today. But on my way home I stopped by Menchie’s! This is my favorite froyo place, but I couldn’t tell you why. It’s basically the same as all the self-serve frozen yogurt joints. For whatever reason, I think Menchie’s is best of the serve-yourselves. And today they were giving away 6 oz for free!!! I finished this delicious cup in car before I got home.

And even though I’d already had Menchie’s for dinner I put together my own (fairly sloppy) version of a turkey lentil meatloaf recipe courtesy of The Fitnessista. ย The fancy ketchup design was my attempt to make it look pretty ๐Ÿ™‚

I actually haven’t tried it yet. That froyo filled me up! But it’ll be great to have something pre-made in the fridge for dinner tomorrow night.

On my way to running a marathon! Again.

Last night I signed up for the Steamboat Springs Marathon! Woop, woop! Currently, I’m focused on running a sub-2:00 half at That Dam Half the first weekend of March, but after a happy amount of R&R after that race I’m going into full-swing marathon training mode. I’ve signed up for a marathon before, the Denver Rock and Roll this past fall. My heart was definitely not in it. I got about 1/3 of the way through my training schedule and just stop running – cold turkey. I had plenty of excuses for stopping, but mostly I was just burnt out and didn’t have enough intrinsic motivation to keep up with crazy long runs each week. Here’s hoping this upcoming training session is 100x better! I’m still working on my training schedule, but so far I’m planning on a mash-up of Hal Higdon and Advanced Marathoning plans.

Advanced Marthoning

I’ve been feeling really strong on most of my runs so far this year. I’m taking that confidence and hoping it helps me push through this training program so, come June 2, I will be able to call myself a marathoner!

What to eat?

The fact that I’m starting med school in the fall and would also like to have all kinds of fun adventures this summer means that I’m watching my budget these days. So, keeping that in mind, I’m really trying to be more creative in using up the food I have at home. I really should get you a picture of my freezer and pantry and extra stuff that doesn’t fit in the pantry. There are all kinds of goodies in my fridge! The challenge is putting it all together in a way that is delicious and healthful.

Usually I start thinking about what deliciousness I get to eat for dinner while I’m still at work. It’s perfect – I get all pumped up to eat my dinner all afternoon, and if there’s anything I need to pick up I’ll just swing by the grocery store on my way home! But tonight I was determined to fix a delicious dinner without picking anything up from the store. Hence, the random hodgepodge of wraps (that have been in the freezer for who-knows-how-long) with spinach and homemade hummus (canned chickpeas!) and some roasted cauliflower on the side. Delicious AND filling!

Friday night, Family night

Fridays are usually great. Fortunately, today did not fail.

This morning I tried out a newer Les Mills class at the gym – CXWORX. I thought it’d be a perfect fit for me because it’s a quick 30 min strength-focused class that’s done early enough for me to still get to work at a decent time. In all honesty, I didn’t love it. BUT! I’m definitely going to try it a couple more times before giving up. I liked that it focused a lot on dynamic core work, and maybe the only reason I disliked it was because I still need to get the hang of the style and moves. Regardless, this morning they had a free pancake breakfast at the gym, which obviously made it a great morning.

I came home this evening to some homemade calzones – courtesy of mom.

And then we spent about an hour trying to pick out a movie. Nate made the executive decision, and we watched The Man from Nowhere.

And played some games.

Hey, Jaleh

Hi! I’m Jaleh and this is where I have chosen to talk about my daily happenings. Currently, this includes researching lung diseases, eating, and running.

I’ve lived in Colorado most of my life and have been in Denver for the past three years. I’ve spent that time pursuing medical school acceptance, and *drumroll* I was just accepted to The University of Colorado med school! So I plan to spend the next six months training for my first marathon, cooking some yummy food, crafting, and knocking off some books on my to-read list.
